You need to have and stove top/oven safe pan for this recipe. No two frittatas are ever the same ingredients – at least at our house. I always just use what I have on hand (usually just veggies no cheese and any dried herbs if I don’t have fresh) Be creative. I don’t think it is possible to mess it up. They are good warm or cold. If it will be our whole meal,  I will add extra eggs and add on cooking time until all eggs are cooked through and set (not runny and doesn’t jiggle). I have used up to 18 eggs. For those of you that don’t know, we have three ravenous teenage boys and two hungry farmers here.

I use this basic formula from The Enchanted Broccoli Forest cookbook by Mollie Katzen I have had for years.
