Storage: Avoid storing sweet potatoes in the refrigerator, which will produce a hard center and unpleasant taste. Instead, store your sweet potatoes in a cool, dry, well ventilated container
NOTE: Sweet Potatoes come in many shapes and sizes. Our sweet potatoes are not meant for long term storage. We do not have the facilities to cure sweet potatoes for long term storage. Also, this is a specialty crop that is costly and manually intensive to grow and harvest. The sweet potatoes sometimes break off during harvest. Some of your potatoes may be broken off – we recommend eating as soon as possible.
